Purslane is one of the richest green plant sources of alpha-linolenic acid, an omega-3 fatty acid which plays an important role in maintenance of a healthy immune system. Purslane is rich in vitamin A, a natural antioxidant value. It also contains vitamin C and B-complex vitamins like riboflavin, niacin, and pyridoxine. It provides highest dietary minerals such as potassium, magnesium, calcium, phosphorous and iron.
Parts used: fresh leaves
Primary activities: antioxidant, nutritive, vegetal source of omega-3 fatty acid
How to use it: 5-10 fresh leaves daily, that can be eaten raw and cooked, in salads, juices, sandwiches, dips, pesto, stir fries, quiches, soups and more.
Caution: Pregnant and nursing women, people suffering from kidney stones.
